FERM FOOD Bread Binder

FERM FOOD Bread Binder is based on plants fermented with lactic acid bacteria.

The main ingredients, buckwheat and faba beans, are locally sourced and fermented with natural lactic acid bacteria at our fermentation factory in Denmark.

FERM FOOD’s Bread Binder can be used in various applications in bread and pastry. It’s a functional and natural ingredient for gluten-free bread. Secondly, the binder supplies protein and fibre to the bread.

The product is available as flour.

Description

FERM FOOD’s Bread Binder can be used in a variety of foods where a gluten-free, multifunctional ingredient is desired.

This product is made from Buckwheat and Faba Beans fermented with a mix of natural lactic acid bacteria.

The carefully selected microorganisms contribute to a reduced content of unwanted compounds such as lectin, vicin and covicin.

Properties: Binds water and fat, uniformity and volume and adds flavour complexity – enabling replacement of additives

Benefits: Less crumbling and increased sliceability, retains softness, adds crispiness and golden colour to the crust

Fermented Buchwheat and Faba Beans are naturally rich in protein, dietary fibre, healthy fats, vitamins, and minerals like calcium, magnesium, iron, and zinc.
